«Integrated in the Hotel *** the Grand Breakfast is located in the heart of the 11th arrondissement between the stations Ménilmontant and Parmentier, 15 minutes from the Place de la République and 20 minutes from the Marais district.
The New Republic offers a gourmet Vegetarian brunch in a modern style and a casual atmosphere, served as a buffet.
The dishes are elaborated by the head Natasha Collet. She devotes special attention to the choice of her ingredients. Working primarily with local producers, the dishes are essentially vegetarian. The dishes are likely to vary, as the fruits and vegetables are fully seasonal.
Salty side, we first taste scrambled eggs smoked paprika and poppy seeds with two cooking: a rather light cooking, and a second longer, (quite adapted to the diet of pregnant women). We then enjoy a salad of quinoa and carrots roasted citrus well raised, a creamy homemade hummus and candied potatoes with herbs.

For the sweet side, a large basket of crisp pastries for butter fuels the senses: chocolate breads, croissants, raisin breads. Chia seed pancakes and bread (baguette or ball, white or cereal) can be accompanied by a selection of homemade jams (apricot, cherry cherry, red berries), honey, maple syrup or hazelnut spread also artisanal.
Finally, two sweet sweets: a cake carrot cake and a homemade energy granola.
The icing on the cake is undoubtedly the surprise of the head, a tray of sweet delicacies, made with attention to detail and taste: a super-melting chocolate and nuts, an acai bowl of red fruits and bananas, a toast with avocado, pomegranate and light cream and a delicious crumble revisited with raspberry.
To quench your thirst, hot drinks (coffee, cappuccino, tea, hot chocolate) are also at will. The fruit juices (orange and grapefruit) are freshly squeezed. Detox juices are arranged in big jars: Water Ginger Detox (fresh mint, verbena, ginger) and Water Bissap Detox (hibiscus, fresh mint).
The healthy and veggie buffet is served every Sunday from 11.30am to 3pm on the ground floor of the hotel. With two or group, the place can accommodate thirty customers, who will be well settled in soft colored sofas. Background music and interior decoration ensure a pleasant moment of culinary discovery.
